Breakfast and Brunch Recipe – Sourdough Buttermilk Pancakes

A light and scrumptious pancake that is quick and easy to make with sourdough starter.

Ingredients

  • 1 egg
  • 2 tablespoons white sugar
  • 1 cup sourdough starter
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 ½ teaspoons baking soda

Cooking Directions

  1. Add egg, sugar, sourdough starter, flour, and buttermilk to a bowl in the order listed. Mix thoroughly before adding baking soda; batter will be light and bubbly. Do not mix again.
  2. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are slightly dry, 3 to 4 minutes. Flip and cook until pancakes sound hollow when tapped with a spatula, 2 to 3 minutes. Repeat with remaining batter.
If you don't have buttermilk, you can substitute 3/4 cup water and cut baking soda back to 1 teaspoon; Substitute a sucralose sweetener (such as Splenda(R)) for the sugar if desired.
