Ingredients

  • ¼ cup vegetable oil
  • 1 teaspoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • salt to taste
  • ½ cup finely chopped onion
  • 3 green chile peppers, sliced
  • 2 large eggs

Cooking Directions

  1. Heat oil in a skillet over medium heat; add garam masala, turmeric, coriander, and salt. Cook and stir onion and green chile peppers in the seasoned oil until onion is slightly tender, about 5 minutes.
  2. Crack eggs into the skillet and season with salt; cook and stir until eggs are set and scrambled, about 5 minutes.
Substitute jalapeno peppers for the green chile peppers, if desired.
