This quick oatmeal is one of my favorites to eat during the week. It has everything you need for a healthy start to your day and is creamy and sweet without dairy or sugar. It's the banana! Switch out the dried fruit and seeds/nuts to our liking.

Ingredients

  • 1 banana
  • ⅓ cup water
  • ⅓ cup rolled oats
  • 1 tablespoon dried cherries
  • 1 tablespoon roasted unsalted pumpkin seeds
  • 1 dash ground cinnamon
  • 1 dash salt

Cooking Directions

  1. Mash banana in a 2-cup microwave-safe bowl. Stir in water, oats, cherries, pumpkin seeds, cinnamon, and salt.
  2. Microwave oat mixture until chewy and soft, about 1 minute 30 seconds. Let stand for 1 to 2 minutes before serving.
