Ingredients

  • 1 cup fresh spinach
  • 1 beet, peeled and cut into quarters
  • ½ cup plain Greek yogurt
  • ½ cup frozen unsweetened red raspberries
  • ½ cup frozen blueberries
  • ½ cup ice cubes
  • 4 slices cucumber

Cooking Directions

  1. Blend spinach, beet, yogurt, raspberries, blueberries, ice cubes, and cucumber together in a blender until smooth.
If you have a blender that doesn't blend well, this recipe may not be for you. I have a Ninja Ultima(TM) and it works perfect for this recipe; Kale can be substituted for spinach.
