Anonymous Recipe ⇝ Green Eggs and Ham

I made these scrambled eggs for my kids when they were obsessed with Dr. Seuss's book 'Green Eggs and Ham,' and it became a family favorite.

Ingredients

  • 3 tablespoons butter
  • 4 thin slices prosciutto, chopped
  • 6 eggs
  • 2 tablespoons heavy whipping cream, or more to taste
  • ½ cup grated Parmesan cheese
  • 2 tablespoons pesto
  • 1 pinch salt and freshly ground black pepper to taste

Cooking Directions

  1. Melt butter in a cast-iron skillet over low heat. Add prosciutto and cook until crisp, 3 to 5 minutes.
  2. Beat eggs and cream in a cup and pour into the skillet. Cook over low heat while stirring until eggs start to set and get creamy, about 10 minutes. Stir in Parmesan cheese and cook and stir for 2 to 3 minutes. Mix in pesto and season with salt and pepper. Serve immediately.
